3 Healthy Low Carb Dinner Ideas | 3 Course Low Carb Dinner I Have Cooked For My Family

My family just visited me and my goal was to show them that low carb diet can be delicious. I decided to make 3 different low carb meals for 3 in under 30 minutes. Cooking healthy low carb dinner for more than 1 person doesn’t need to be hard, I was able to come up with 3 different low carb dinner ideas just by using only fresh vegetables and great cheese.

First low carb meal that I have prepared were root veggies fries. I have used carrots and celeriac but you can also use same cooking method for parsnip or beetroot. These low carb fries needs to be prepared first because they take about 30 minutes to cook.

Celeriac and carrot fries

Ingredients
1:1 ratio of carrots and celeriac
Olive oil
Salt
Pepper

Instructions
Peel skin off carrot and celeriac
Cut carrots and celeriac into “fries” shape
Spread sliced carrots and celeriac on baking sheet
Drizzle everything with olive oil
Bake at 390°F/200°C for ~25-30 minutes
Sprinkle with salt and pepper
Enjoy 🙂

For second low carb meal I have decided to make Caprese salad which is one of my very favorite fitness salads. It was first time I have used at home buffalo’s mozzarella and it was really worth!

Caprese salad

Ingredients
Cherry tomatoes
Buffalo mozzarella
Fresh basil
Olive oil
Salt
Pepper

Instructions
Quarter about 2 handfuls of cherry tomatoes
Move quartered tomatoes onto plate
Chop mozzarella into smaller pieces
Spread chopped mozzarella on top of tomatoes
Drizzle with olive oil
Sprinkle with salt and pepper
Add chopped fresh basil to salad
Enjoy 🙂

Last thing I have prepared for low carb dinner was cheese/ham selection plate. There are no rules on how to make it correct, just use your favorite cheese/ham combination and chop everything into “finger food” size.

Cheese/ham selection plate

Ingredients
Fresh arugula
Green bell pepper
3 cheeses (parmigiano, comté, chedar)
Prosciutto crudo

Instructions
Prepare base from fresh arugula
Chop green bell pepper into smaller size
Halve prosciutto slices, roll them and spread onto plate
Chop cheeses into “finger food” size
Spread cheeses onto plate
Enjoy 🙂
