Atkins Diet Recipes: Low Carb 7-Layer Salad (IF)

** Recipe included in my new low carb, gluten free cookbook, Low Carbing Among Friends. Please check it out at our website @ **

In partnership with FaveDiets ( ) recipe site, this recipe is a continuation of my Thanksgiving series of recipes. This is a really simple recipe that can be made a day before the big event. The dressing is a simple concoction that I use in many different recipes from Cole Slaw to lettuce salads. You control the sweetness and tartness for your own tastes. My Grandma used to make a higher carb version of this recipe (with real sugar) almost every Sunday for family dinners, and I was happy that the low carb version will pass anyone’s test. It also adds to a colorful table and plate.
