This is a low carb dinner option that I found on pinterest. You can also make it more healthy by reducing the amount of cheese and mayo – it still tastes just as good!
2 lbs. ground beef
3 Tablespoons onion powder
1 cup mayonnaise
1/2 cup heavy cream
16 oz shredded cheddar
salt and pepper to taste
Brown ground beef and drain
Mix in onion powder, salt and pepper
Stir in 3/4 of the shredded cheddar, leaving some for the top at the end.
Dump meat mixture into a 9 inch pan or over safe dish.
Whisk together the mayonnaise, heavy cream, and eggs with a dash of salt and pepper. Pour over meat mixture and top with cheese.
Bake at 350 degrees for 30-35 minutes or until bubbling. Take out of the over and let stand for 10 minutes before serving.
