Recipe: (Preheat oven to 300º)

almond meal 200 grams
coconut oil 100 grams
Splenda (or other) 15 grams
egg 1
vanilla extract 1 tsp
salt pinch

Portion about 1 tablespoon per cookie. I find a melon baller works perfectly.

Cook for 5 minutes
Press down slightly with fork
Cook for another 18 minutes

Keeping them in the fridge helps firm them up. Enjoy!
